Dark Chocolate Bacon Cupcakes

On this blog, Saturday is Bacon recipe day. So no Excel tips and tricks today. Today we learn about bacon.

 

I'm in the mood for something sweet today. How about some Dark Chocolate Bacon Cupcakes?

Here's what you'll need:

 

6 slices bacon
1 cup all-purpose flour
1/4 cup and 2 tablespoons unsweetened cocoa powder
1 cup white sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
1 egg
1/2 cup cold, strong, brewed coffee
1/2 cup buttermilk
1/4 cup vegetable oil
1 teaspoon unsweetened cocoa powder, for dusting

  

Preheat oven to 375 degrees F (190 degrees C).

Cook Bacon over medium-high heat until evenly brown. Drain, crumble very well and set aside.

In a large bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder and salt.

Make a well in the center and pour in the eggs, coffee, buttermilk and oil. Stir just until blended.

Mix in 3/4 of the bacon, reserving the rest for garnish.

Spoon the batter into the prepared cups, dividing evenly.

Send these babies to the oven for 20 to 25 minutes (until the tops spring back when pressed lightly)

Let the cupcakes cool compelety before frosting.

When cool, frost with your favorite chocolate frosting and sprinkle reserved bacon crumbles on top.

Dust with additional cocoa powder.

 

Notes: I like to frost the cupcakes with a piece of crispy bacon. That way, I can eat the spoon when I'm done.

    I have a question. What does sprinkling bacon bits on the top of the cupcakes have to do with eating a spoon? From my understanding the spoon is still made of either metal, plastic, or wood. Not good eatin', in my opinion.
