This week’s Bacon post is a bit late. I’ve been watching the children while Mrs. Pig is deluged with the new baby. Mrs. Pig gets about 3 hours of sleep a night with the new piglet. I lucked out because she decided to breast-feed. That gives me an obvious excuse not to help in the middle of the night. Although my breasts are quite developed, I still can’t produce life sustaining nutrition. I like to tell her that my breasts have the motion without the potion.
Well, that’s quite enough information. In honor of Mrs. Pig’s sleep deprivation; today’s recipe is Coffee and Brown Sugar Bacon.
Here’s what you’ll need:
1 pound thick-cut bacon
1 tablespoon ground coffee
1/2 cup packed brown sugar
2 tablespoons freshly brewed coffee
Preheat oven to 375°. Line a rimmed baking pan with parchment or waxed paper and set a flat rack on top.
Lay bacon strips on rack, overlapping slightly if needed. Sprinkle top of strips evenly with ground coffee.
In a small bowl, combine brown sugar and brewed coffee, stirring just to blend to a paste.
Brush top of strips with half of sugar mixture.
Bake 15 minutes.
Turn bacon over and brush with remaining sugar glaze.
Bake until crispy, 10 minutes more.
Notes: If your sleep-deprived wife falls asleep at the breakfast table, the rule is that you get her bacon.


Today I decided that I need to be purchasing a coffee bean grinder, but there’s so many different things to consider, many of which I’ve never even heard of before, things like: How long does it take to actually grind the coffee beans? How much can I grind at one time? Is the coffee bean grinder electric or manual? Is the grinder a space saver? How many coarness levels does the grinder have, ie; fine, ultrafine or coarse, medium coarseness. How was the cost of a grinder? What is difference in the most expensive grinder to the less expensive grinders? Can you use any flavor of coffee to grind? Does the coffee bean grinder come attached to a coffee maker? Will the coffee grinder have a any type of timer- along with a automatic turn off mechanism?
